I love to try new recipes and create my own delicacies. I initially created this recipe to submit for the Quaker Oats Contest’16, however, I was late to submit. This recipe is very easy to make and an ideal lunch box dish too. The crispy patties rolled up in a flat bread/roti along with some crunchy veggies and juicy sauces is just delicious. Give it a try, I’m sure you will like it too!
This Veggie frankie is made by using Quaker oats (you can use any oats), mashed potatoes, sautéed spinach, chopped green chillies, chopped cilantro, cumin powder, coriander powder, garam masala (powdered whole spices), chili powder and salt to taste. Mix all the ingredients in a bowl, spritz some lemon juice and mould them into small patties. Sprinkle some sesame seeds on top of your patties to add some flavor. Shallow fry the same in oil until they turn golden brown.

Place them in a roti (flat bread). You can prepare a fresh roti using all purpose flour, wheat flour and salt or use the readily available ones that you can purchase in a supermarket for burrito wraps or tortillas and heat them up.
Once you place the patties on the roti, add in chopped tomatoes, onions, lettuce and green bell pepper. Add some ketchup, mayonnaise, mustard sauce (optional), roll them up and cut it into two.
Though we usually eat frankies as a whole, I prefer them as two mini wraps just so it’s easier (and less messy) to eat. And your frankies are ready! Happy eating! 😀
