Sweet & Sour Tacos


 

As part of the Mango Mania recipes, I wanted to prepare a fresh salad using ripened mangoes. This is a very quick and easy to make snack to complete your evenings. Since my previous two posts were more on the sweeter side, I want to prepare something light, refreshing and super summery. So, I prepared this salad to eat as a filling for the tacos, and it really tasted amazing! I’ve always loved the combination of sweet and tangy flavors; I think they hit it off very well.

 

The sweet mangoes taste delicious with the combination of fresh vegetables and greens, and fills the stomach as an appetizing meal when you have it along with the tacos. I often make salads at home, but this one with the added mango is a completely new found love for us. The sweet, juicy mango paired with the natural salty but subtle taste of avocados delivers the perfect combination of sweet and sour. Onions and bell peppers give crunchiness to the salad while avocados and mangoes balance it with their smooth, creamy texture. This salad is packed with flavor in its every bite- the delicious sweetness of the mangoes, the slight hit of spice from the chilies, and the sourness of the freshly squeezed lemon juice- it really is quite an exquisite salad when eaten along with the crunchy tacos. Its bright and colorful appearance makes it an instant mood booster! There’s also that tiny added benefit of it being an absolutely hassle-free and quick snack! 😀

Mango Tacos Recipe:

Remove the peel of the mangoes and avocados, and cut them into fine cubes. Chop the onions, bell peppers, jalapeños/green chilies finely. Wash and cut the lettuce into long shreds. I also used some broccoli sprouts for my tacos.

Combine chopped mangoes and all the other vegetables into a large bowl, add some salt and lemon juice to season it.

Stuff the tacos with the mango and vegetable filling and add any dressing of your choice on top. I prepared a spicy peanut dressing, to be poured over my tacos just before eating them. I blended the roasted and salted peanuts with some red chili flakes,  adding some water to it. Just dress the tacos from the top before serving and enjoy! 😀
